Bearito Pancakes
After buying a new skillet the shape of a bear, I had to make pancakes to try it out the next morning. The usual pancake recipes work, except I substituted any type of buttermilk for yogurt instead. Also, using almond milk in lieu of actual milk cuts 2/3 the calories and it's just as creamy! This also gave me a chance to use up some of the apples from apple picking the day before. I took a picture of the recipe I used, my current favorite: Gwen Paltrow's cookbook My Father's Daughter. She's great at including vegetarian and vegan alternatives as well as healthy food substitutions. Also her blog is pretty amazing as far as celebrity blogs go---ignore all the alternative medicine/spirituality posts and focus on what she does best: food and fashion tips!
