I frequent a new neighborhood favorite: Darling Coffee on weekend and order my cold-brewed chicory blend iced-coffee with soy. This time around, they have a new menu of daily soups, rotated every 2-3 days or so. I tried this genius and simple recipe at home and the emulation came out almost as yummers as the concoction at the cafe.
1. boil carrots and blend to pulp.
2. add curry powder, and whatever spices tickle your fancy.
3. salt and pepper to taste.
4. I added yogurt and soy milk for a creamier texture. about half cup each.
5. I also blended in 1/4 of a butternut squash because I had one on hand. why not?
6. dollop of yogurt and fresh parsley on top. chive & celery water crackers.
All together, 1 cup of soup should round to ~100 calories. Not bad at all. My dog also quite enjoys it---great because genetically Frenchies are said to have weak eyesight.
